I love spring, and it's here, it's finally here... well until the next snowfall, we do live in Utah after all. Sunshine and capris one day, snow and winter coats the next. Just look at what I found in my garden, and by my garden I really mean someone elses, and by someone elses, I mean on the internet, but it is beautiful...
Next week my darling children are out of school for Spring Break. We usually go out of town for a little get away, but not this year. This year we decided to stay home and relax... ya right- there is no relaxing when you have all the kids at home all...day...long.
So knowing that my week will be filled with the harmonic sounds of "I'm bored...She wont let me play with her... He changed our T.V. again... The baby ate all my food" I decided to make the meals for the week simple and base them on good ol' comfort foods.
Monday-
Shepard's Pie with homemade bread- Ground Beef in a rich tomato sauce topped with green beans or corn (your choice) creamy mashed potatoes and cheese $25
Tuesday-
Baked Ziti- Tender ziti with ground sausage in a delicious sauce and 3 cheeses $25
Wednesday-
Meatloaf Muffins with smashed potatoes- Home style meatloaf made into muffin shapes with tasty smashed roasted garlic red skin potatoes $25
Thursday-
Chicken Pasta Salad- This yummy salad with bow tie pasta with tender chunks of chicken mandarin oranges, celery and cashews is sure to become a family favorite. $25

Don't you just love contests? Well I do, especially a fun one!
Do you have a favorite restaurant that you love to eat at and you order the same thing every time? Ever wish that you could make it or have it at home? We all know how expensive take-out can be. One of my favorite things to do is to recreate restaurant recipes at home. So here's your chance to get your favorite restaurant recipe featured on one of our weekly menus. If I choose your favorite dish you will win that meal for your family!!!!
For instance, one of my favorite dishes to order whenever we go out is Kim's Capellini from Roosters. It took some time but I finally got it down. it is now one of my family's favorites and we love to add grilled chicken or shrimp to it.

BBQ Pulled Pork Sandwiches with Homemade Coleslaw- Tender slow roasted pork served with a tangy BBQ sauce and our homemade coleslaw with bits crisp apple and a little kick $25
Wednesday March 27th:
Traditional Lasagna with Green Salad- $25
Thursday March 28th:
Sweet Pork Salad- This is the popular salad from your favorite fresh mex take out restaurant. Crisp greens with black beans, cilantro rice, sweet pork, pico de gallo, cojita cheese and tortilla strips. Comes with delicious cilantro ranch dressing.
You may want to have on hand sour cream and guacamole to finish it off. $25

A little late...
Sorry for the late posting, I was off having too much fun in the sunshine. Here's a quick rundown of next weeks meals...

White Lasagna-chicken bacon and artichokes in a delicious alfredo sauce layered in traditional lasagna style. Comes with a delicious Mediterranean style salad. $30
Tuesday-

Up And Runnin'...
Holy whirl wind of a week! I have the first week under my belt and things went pretty well. Thank you so much to all my fabulous customers from last week. I truly hope you enjoyed your food as much as I love preparing it.
Someone asked me how I come up with the menus and recipes, the truth is I don't know. Just like a photographer can look at a particular location and have vision and inspiration that's kind of what I do but with food and recipes. The meals I make are not necessarily original, or fancy they are just what I feel like eating that week. I remember my first trip to Seattle and Pike Place Market... OH MY GOSH I could live there.
This was the MOST beautiful sight to me. I know it's lame to most people, but this gets me excited, this gets my mind running and thinking of ALL the things I can create. I would have stayed all day and shopped and then ran home to create yummy things, but we were staying in a hotel. Ingredients are inspiration to me and sometimes recipes and ideas come as easy as walking into a grocery store. Other times I get stuck and look through magazines, or on the Internet. Sometimes inspiration comes with a change in season which was partly the case for this weeks meals.
While thinking of the menu for the upcoming week I've had a couple thoughts running thru my head, the first being my Mom Margie, who has taught me the love of cooking. When I think of her, I of course think of Mexican food because that's my heritage, I know blonde hair blue eyes- who'd ever believe it? It's what I grew up on. It's what I craved when I was pregnant, and what I turn to when I need comfort. Nothing cures a bad day like fresh tortillas... I remember, when I was in High School, begging her not to make it because then our house would "stink" like Mexican food, and now when I walk up to her house and smell that "amazing stink" of Mexican food, I know I'm home.
My second thought this week is I want something easy to prep for Tuesday because I have so much to do to get 6 people out the door for baseball on Wednesday. So here it is next weeks menu...
Monday March 11-
Margie's Famous Tacos with Rice- Beef tacos in handmade tortilla shells (these will be prepped for you but you will need to fry at home) Lettuce and tomato provided.
**You may want to have on hand, oil for frying, cheese, salsa, or sour cream, or any other toppings you like $25
Tuesday March 12-
Cheese Tortellini in Basil cream sauce with Grilled Chicken and Italian green beans also comes with a fresh loaf of Homemade Bread- This is a fairly light dish despite it's name. The basil, yellow bell peppers and Italian green beans make this a great dish to welcome Spring! $25

Wednesday March 6th-
Burritos with Chile Verde and Rice- Yes its authentic, yes I do make my own beans, tortillas, chile, rice... You will love this! $30
Thursday March 7th-
Creamy Cauliflower Cheese Soup with Large Spinach Salad- Creamy delicious soup your kids (or husband in my case) will never know there's Cauliflower in it. Salad has Spinach and iceberg lettuces with Swiss cheese, cottage cheese, bacon, red onion and homemade poppy seed dressing. $25
