And so it begins... (again)

We are starting up again next Monday August 5th watch for our menu this Friday! Do have a request? Comment under here and tell us!

How does it work? Monday thru Thursday I prepare a set number of meals that are available for purchase. Friday morning on my Facebook Page I will post the menu for the upcoming week. All you have to do is PRIVATE MESSAGE or EMAIL me your orders along with your contact information. Fresh Fix meals are available on a first come basis so get your order placed EARLY!

Most meals are $25-$35 and serve 4-6 people depending on how hungry they are. Please check the weekly menu for more information and prices.

Fresh Fix meals are available for pick up Monday thru Thursday. All meals will be ready for pick up between 3:30-5:30 p.m. What?! Why can't I pick it up later? Well you see I have 4 children that keep me running during the evening, and my family is my top priority as well as sitting down with them for our own nightly family dinner. Early/late pick-ups can be requested when placing your order.

Trying New Things...

Remember when you were little and your mom put a plate in front of you with strange foreign objects you've never seen before and called it "dinner". As you looked upon it wondering what planet she found this on she said "Try it you'll like it", ya right...

Well lately I have had a lot of requests for some gluten free meals, so this week I am going to try a few. Some of these meals probably include ingredients you don't know how to pronounce or flavors you've never tried but I promise they are good!




Monday- Mediterranean Chicken with Quinoa
Tender chunks of chicken breast with zucchini sun dried tomatoes basil and feta cheese served with quinoa. Full $30 Half $20







Tuesday-Green Pepper Steak

Tender strips of steak in a rich sauce served with your choice of white or brown rice. Full $30 Half $20






Wednesday- Middle Eastern Spiced Turkey Meatballs with Greek Rice and Salad. Full $30 Half $20 (You may want to have some Tzatziki sauce for dipping)





Thursday-Carne y Papas (Meat and Potatoes) Straight from my grandmas recipe box...
Tender strips of sirloin steak simmered in a Mexican gravy with potatoes served with a side of corn tortillas. Full $30 Half $20

Craziness...

Hi Peeps,

Sorry for the late posting. Due to end of the school year craziness I am only offering dinner on Tuesday and Thursday this week. These are 2 of my most popular dishes and so I will be offering 6 of these each night instead of the usual 4.

Tuesday- Lemon Greek Chicken
Lemon and oregano season this whole chicken cut up with oven roasted potatoes. Comes with a beautiful Greek Salad and dressing. $30 Full  $20 Half



Thursday- Chile Verde and Burritos
Margie's Famous Chile Verde and burritos with Mexican rice. This meal can be made Gluten -Free (with corn tortillas) Please request this when ordering.

Small Changes...

I've had requests for smaller portions of meals so I'm now offering half size meal portions that feed 2-3 people. Prices for full and half sizes are now listed.




Monday- Mexican Lasagna  (Full $30 Half $15)
Layers of seasoned ground beef corn tortillas beans and cheese make up this delicious meal. You may want to serve with a dollop of sour cream.





Tuesday-Chicken and Dumplings (Full $30 Half $15)
Tender chunks of chicken with veggies in a creamy broth with soft herb dumplings







Wednesday- Stuffed Green Peppers (Full $30 Half $15)
Seasoned ground beef in green peppers served with roasted garlic red potatoes





Thursday- Margie's famous Tacos (Full $30 Half $15)
Ground beef tacos in homemade tortillas served with Mexican rice. (you will need to fry these at home to finish them off)

Hearing Wedding Bells...

This Friday my darling niece is getting married! I'm so excited for her, I remember when she was born. I remember her being 3 years old and sitting in the backseat of my cute little sports car in her booster seat singing Alanis Morrisette with me at the top of our lungs, OK not exactly the best choice of music for a 3 year old, but dang she was cute. So this weeks menu is simple and hearty and filled with some of her favorites.

Tender marinated chicken breast and a rich sauce with rice pilaf - $30










Thursday- White Chicken Chili with Cornbread
Chicken breast, white beans, and green chilies in a creamy delicious broth. You might want to try it with crumbled tortilla chips and diced avocado and a squeeze of lime - $25

A month all ready...

I can't believe it has been a month since I started this little venture. I am so excited about the success that it has had. I'm so grateful for all our friends that have helped make it what it is.

Monday April 8th
Creamy Pesto Linguine with Parmesan Chicken- tender Parmesan crusted chicken in a homemade pesto sauce with mushrooms and tomatoes. Comes with a fresh loaf French bread. $30

Tuesday April 9th-
Beef Enchiladas and Rice- Homemade tortillas filled with seasoned ground beef and rolled in homemade enchilada sauce comes with Mexican rice. $30

Wednesday April 10th-
Thai Crunch Chicken Salad- tender chicken pieces atop mixed greens with mandarin oranges, bean sprouts and a yummy homemade peanut soy dressing. $25

Thursday April 11th-
Chicken enchilada soup with a Mexi ranch salad- one of our favorites is back by popular demand. Get your order in quick for this one, as it is sure to sell out. $25

Spring has sprung....

I love spring, and it's here, it's finally here... well until the next snowfall, we do live in Utah after all. Sunshine and capris one day, snow and winter coats the next. Just look at what I found in my garden, and by my garden I really mean someone elses, and by someone elses, I mean on the internet, but it is beautiful...



Next week my darling children are out of school for Spring Break. We usually go out of town for a little get away, but not this year. This year we decided to stay home and relax... ya right- there is no relaxing when you have all the kids at home all...day...long.

So knowing that my week will be filled with the harmonic sounds of "I'm bored...She wont let me play with her... He changed our T.V. again... The baby ate all my food"  I decided to make the meals for the week simple and base them on good ol' comfort foods.

Monday-
Shepard's Pie with homemade bread- Ground Beef in a rich tomato sauce topped with green beans or corn (your choice) creamy mashed potatoes and cheese       $25

Tuesday-
Baked Ziti- Tender ziti with ground sausage in a delicious sauce and 3 cheeses       $25

Wednesday-
Meatloaf Muffins with smashed potatoes- Home style meatloaf made into muffin shapes with tasty smashed roasted garlic red skin potatoes  $25

Thursday-
Chicken Pasta Salad- This yummy salad with bow tie pasta with tender chunks of chicken mandarin oranges, celery and cashews is sure to become a family favorite. $25

Don't you just love contests? Well I do, especially a fun one!

Do you have a favorite restaurant that you love to eat at and you order the same thing every time? Ever wish that you could make it or have it at home? We all know how expensive take-out can be. One of my favorite things to do is to recreate restaurant recipes at home. So here's your chance to get your favorite restaurant recipe featured on one of our weekly menus. If I choose your favorite dish you will win that meal for your family!!!!

For instance, one of my favorite dishes to order whenever we go out is Kim's Capellini from Roosters. It took some time but I finally got it down. it is now one of my family's favorites and we love to add grilled chicken or shrimp to it.

     BBQ Pulled Pork Sandwiches with Homemade Coleslaw- Tender slow roasted pork served with a tangy BBQ sauce and our homemade coleslaw with bits crisp apple and a little kick    $25

Wednesday March 27th:
     Traditional Lasagna with Green Salad- $25

Thursday March 28th:
     Sweet Pork Salad- This is the popular salad from your favorite fresh mex take out restaurant. Crisp greens with black beans, cilantro rice, sweet pork, pico de gallo, cojita cheese and tortilla strips. Comes with delicious cilantro ranch dressing.
You may want to have on hand sour cream and guacamole to finish it off.    $25

A little late...

Sorry for the late posting, I was off having too much fun in the sunshine.  Here's a quick rundown of next weeks meals...

Monday-
White Lasagna-chicken bacon and artichokes in a delicious alfredo sauce layered in traditional lasagna style. Comes with a delicious Mediterranean style salad. $30

Tuesday-
Capellini- your choice of shrimp or chicken breast with roasted garlic, basil, and sundried tomatoes. Comes with a fresh baked loaf of french bread. $30

Thursday-
Spicy Potato Soup with Fresh Garden Salad and Ranch Dressing- this soup is not as it sounds. It has just a little kick to make it interesting. $25

Up And Runnin'...

Holy whirl wind of a week! I have the first week under my belt and things went pretty well. Thank you so much to all my fabulous customers from last week. I truly hope you enjoyed your food as much as I love preparing it.

Someone asked me how I come up with the menus and recipes, the truth is I don't know. Just like a photographer can look at a particular location and have vision and inspiration that's kind of what I do but with food and recipes. The meals I make are not necessarily original, or fancy they are just what I feel like eating that week. I remember my first trip to Seattle and Pike Place Market... OH MY GOSH I could live there.
This was the MOST beautiful sight to me. I know it's lame to most people, but this gets me excited, this gets my mind running and thinking of ALL the things I can create. I would have stayed all day and shopped and then ran home to create yummy things, but we were staying in a hotel. Ingredients are inspiration to me and sometimes recipes and ideas come as easy as walking into a grocery store. Other times I get stuck and look through magazines, or on the Internet. Sometimes inspiration comes with a change in season which was partly the case for this weeks meals.

While thinking of the menu for the upcoming week I've had a couple thoughts running thru my head, the first being my Mom Margie, who has taught me the love of cooking. When I think of her, I of course think of Mexican food because that's my heritage, I know blonde hair blue eyes- who'd ever believe it? It's what I grew up on. It's what I craved when I was pregnant, and what I turn to when I need comfort. Nothing cures a bad day like fresh tortillas... I remember, when I was in High School, begging her not to make it because then our house would "stink" like Mexican food, and now when I walk up to her house and smell that "amazing stink" of Mexican food, I know I'm home.
My second thought this week is I want something easy to prep for Tuesday because I have so much to do to get 6 people out the door for baseball on Wednesday. So here it is next weeks menu...

Monday March 11-
     Margie's Famous Tacos with Rice- Beef tacos in handmade tortilla shells (these will be prepped for you but you will need to fry at home) Lettuce and tomato provided.
**You may want to have on hand, oil for frying, cheese, salsa, or sour cream, or any other toppings you like $25


Tuesday March 12-
      Cheese Tortellini in Basil cream sauce with Grilled Chicken and Italian green beans also comes with a fresh loaf of Homemade Bread- This is a fairly light dish despite it's name. The basil, yellow bell peppers and Italian green beans make this a great dish to welcome Spring! $25

     Kicked up Mac n Cheese with grilled chicken-Large family size portion of macaroni in a creamy homemade sauce made with 3 delicious cheeses with just a little kick of spice, and a loaf of homemade bread    $25

Tuesday March 5th-
     Beef Stroganoff- Tender strips of steak braised in a delicious sauce with just a touch of sour cream and served over egg noodles.     $25

Wednesday March 6th-
     Burritos with Chile Verde and Rice- Yes its authentic, yes I do make my own beans, tortillas, chile, rice... You will love this!   $30

Thursday March 7th-
     Creamy Cauliflower Cheese Soup with Large Spinach Salad- Creamy delicious soup your kids (or husband in my case) will never know there's Cauliflower in it. Salad has Spinach and iceberg lettuces with Swiss cheese, cottage cheese, bacon, red onion and homemade poppy seed dressing. $25

Wow!!!

I am so overwhelmed at the response I have gotten from friends on Facebook and we haven't even officially launched yet!!!! We are close to our 50th "Like" on FB and I will give one lucky person a FREE Fresh Fix meal for simply sharing our picture and liking my page.  To say that I am excited about this new little venture would be an understatement.

I just wanted to take a minute to answer a couple of questions I've received.  Fresh Fix meals are made fresh each day they are not meant to be freezer meals, however what you choose to do with your meal is up to you. The premise behind Fresh Fix is that you have a hot, fresh wonderful meal for your family with minimal effort.

Some of our meals are Gluten-free, or Organic but that will be included with each meal description. I assure you that I make every effort to use the best ingredients available to me when preparing Fresh Fix meals. 

When ordering please be sure to list any allergies you may have, I will contact you with more information if I feel necessary.

As a reminder, while starting out, there will be 4 of each meal available each day. All orders must be made in advance. Unfortunately, I am unable to accommodate same day orders. To make ordering easy (and fair) please order via email at afreshfix@gmail.com.  Our menu will be posted via our blog

A Fresh Start...

Why A Fresh Fix?  What do YOU eat for dinner each night?  Is it saturated with oils and sauces and creams? Has it been canned, processed, or frozen and absolutely void of any nutritional value?  Well - let me step in.  Let me create meals for you that you'll feel GREAT about serving to your families and putting in your body.

All of my Fresh Fix meals are made fresh daily with the best ingredients, never frozen, never sitting around with an expiration date... I make the meals that you would make if you had the time.

Fresh Fix meals are prepped and ready for your oven. Generally, all that is required on your end is a thorough heating as per instructions included with your meals. Some speciality meals may require slightly different effort but all this information will be listed on the menu prior to order. 

Fresh Fix meals are prepared from my tested recipes. It is very difficult to customize some recipes, but if you have a specific request please list it with your order and I can evaluate whether or not I am able to accomodate.
